A Coastline Built on Fish
The Versilian coast has fed on the sea for centuries. Viareggio has one of Italy's most active fishing ports, and the morning fish market — the mercato del pesce — sets the rhythm of every serious kitchen in the region. What arrives on your plate in the evening was swimming that morning.
What to Order
Cacciucco: Versilia's signature dish. A deep, saffron-scented fish stew built on soffritto, red wine, and chilli, piled over grilled Tuscan bread. Every family has its own recipe. At its best — at a trattoria steps from Viareggio port — it is one of Italy's great regional dishes.
Fritto misto di mare: The Versilian fritto misto is lighter than the Roman version — battered squid rings, red mullet, anchovies and shrimp, fried in clean oil and served immediately. The key is eating it hot.
Raw shellfish: Cannolicchi (razor clams), telline (tiny wedge clams harvested from the shallows), and cozze (mussels) appear on every serious seafood menu. Often served raw with lemon or steamed in white wine.
Spaghetti alle vongole: The Versilian version uses the tiny telline clams rather than the larger vongole veraci, giving a more intense, briny flavour. If you see it on a menu, order it.
The Best Areas for Seafood
Viareggio Port
The working port area — around Via Coppino and Via Zanardelli — houses the most authentic seafood restaurants in Versilia. No tourist menus. The waiters will tell you what arrived that morning. Prices are honest.
Forte dei Marmi
The Michelin end of the spectrum. Lorenzo has held its star for decades on the strength of the finest seasonal seafood. The setting — white tablecloths, a terrace under the pines — is quintessential Versilia.
Marina di Pietrasanta
The lungomare restaurants here are more relaxed and family-friendly, with excellent value for money. Perfect for long lunch with children, followed by a beach afternoon.
The Insider Rules
- Arrive hungry at lunch — the best cacciucco is a midday ritual, not an evening one
- Ask what arrived this morning — any good restaurant will know immediately
- Never order seafood on Mondays — Italian fishing boats don't sail on Sundays, so Monday fish is older
- White wine, always — Vermentino from the Colline Lucchesi or a crisp Vernaccia makes the perfect pairing
